How To Pickle A Cucumber
Ingredients:
1 x cucumber
3 x spring onions
2 x green finger chillies
1 x tsp szechuan red pepper corn
1 x tbsp sugar
1 x tbsp salt
1 cup of light soy sauce
1 x tbsp dark Chinese vinegar
Step 1: cut the cucumber into medium size cubes
Step 2 : cut the spring onions and green chilies
Step 3: Make the stock. Mix a cup of light soy sauce with 1 tbsp of dark Chinese vinegar, 1 tbsp of sugar and 1 tbsp of salt. Add in 1 tsp of szechuan red pepper corn.
Step 4: Put everything together. You can put half of the cucumber into your jar first and then put the chopped spring onions and chilies followed by another half of the chopped cucumber. So you have the spring onions and chilies buried in the middle which could help the spring onions and chilies work both up and down.
After you have the vegetables in the jar, slowly pour your pickle stock into the jar till it totally immerse the veg.
Fasten the lid on. And you can store the pickle either in a dark cool cabinet or in your fridge.
Leave at least overnight before you enjoy your homemade cucumber pickle.
PS: Always use a spare fork or spoon or whatever you use to take out the pickle you need.
PS: The amount of sugar, soy sauce, salt, vinegar totally depends on your taste. My recipe is just a guide based on what I like.
